I think the best view of a restaurant is from the back. The chef let me sneak my camera into their kitchen to capture waiters taking orders and sharing stories with the customers seated at the bar. As one of the best restaurants in Tokyo, the staff are busy but the food is not prepared in a rush. I have never had smoked pork belly as good as the one served here at Ippo.
